Happy Mother's Day

So for Mother's Day I decided to cook for my mom since she needs a break from cooking for me all the time when I'm at home. She goes to church at around 9 a.m. and gets back around 12:30. So that gave me 3.5 hours to cook. Unfortunately, I didn't really come up with my plan until 1 a.m. the morning of so I had to go out and buy the ingredients. Another obstacle came up. My mom had taken the only car we have to church. Meaning? I had to walk to the store.

I got up at 9:20ish, ate a quick breakfast, said bye to the dog, and left. The store is about 1.3 miles from my house so it took about 25 minutes to get there, 10 minutes to shop, and about another 20 minutes to get back. The whole way there and back my allergies started acting up. I was coughing like crazy (probably scaring everyone I passed) and my nose was running. But I made pretty good time! Got back before 11 and started cooking. The cooking process went well so nothing to say about that.

I managed to finish everything just as my mom got back so I got to serve her everything nice and hot. I think she really enjoyed the food. If I do this again next year, I'll definitely plan ahead.

And here are the fruits of my labor. :P

First was a double tomato bruschetta. Her favorite.

Then the main course. Spanish rice.

And for dessert; blueberry cream muffin.
